Gildas Guest Chef Series

February to August 2026

Introducing Gildas Guest Chef Series featuring some of Australia’s most respected and influential culinary chefs.

Across six intimate events, guest chefs – local, regional, and interstate – will collaborate with Lennox Hastie and the Gildas team to create a collaboration menu that celebrates both chef’s approach to food and commitment to produce, while grounded in the Basque pintxo taverna ethos of seasonal produce, simplicity and generosity.

The first guest star of our dinner series is Ollie Wong from Byron Bay favourite, Bar Heather.

Head Chef Ollie Wong takes over the Gildas kitchen for a one-off collaboration with Lennox Hastie (Firedoor, Gildas), presenting a five-course shared menu. Named Good Food Guide Best New Regional Restaurant 2024, Bar Heather is known for its vibrant natural wine program and produce-driven cooking – now coming to our corner of Albion Street for one-night-only.
