Gildas x Hendrick’s Gin Collaboration
The number one rule of a martini is it has to be cold, and now the endless quest to find a perfectly chilled martini is over.
Gildas has teamed up with Hendrick’s Gin to collaborate with local ceramicist Joe Gilbert of Poldy Pots to create custom stoneware martini vessels, designed exclusively for our little Basque-inspired wine bar. More porous than glass, the stoneware acts as insulators to slow heat transfer, keeping each sip bracingly chilled from first to last.
A trio of classic martini specials will be served in these custom goblets – whisked straight from the freezer – each made with Hendrick’s Original Gin, and various Spanish and Australian liquors, reflective of Gildas’ menu – a changing exploration of incredible Spanish and Australian produce. With the option to pair them with Gildas’ signature pintxos.
With new outdoor seating on the corner of Albion Street and the sun heating up, there’s never been a better time to enjoy a Friday or Saturday lunchtime martini, early knock off drink, or an essential martini to start your night. Ice-cold Hendrick’s Gin martinis are waiting for you at Gildas.
Gildas and Hendrick’s Gin collab martini menu is available now through to July 2026.
