On Tuesday 3 February, Gildas welcomes Chef Terry Lai from our Firedoor family for a one-night-only takeover of the Gildas kitchen.
For this special dinner, Terry draws on two and a half years of experience working alongside Lennox Hastie at our sister restaurant Firedoor, celebrating the meeting of Taiwanese, Basque, and Australian flavours in a five-course menu created with Lennox and Gildas Head Chef Zach. It’s a chance to experience dishes that tell the story of his culture, crafted with precision, care, and a nod to both cuisines.
Taiwan’s culinary traditions are built on layered, balanced flavours and the natural expression of every ingredient. From Minnan and Hakka to Japanese and regional Chinese influences, Taiwanese cuisine has long been a masterclass in fusion.
Expect dishes such as pork belly bao, Taiwanese-style fried calamari, hot and sour clam and jamon soup, and Terry’s take on the Gildas signature soft serve: condensed milk soft serve with mango and cured egg.
