Acclaimed Kiwi chef Josh Emett—of Gilt Brassiere, Onslow, and The Oyster Inn—is crossing the Tasman to team up with Lennox Hastie at Gildas for their take on Surf ‘n’ Turf: a menu celebrating land and sea.
The Surf ‘n’ Turf menu — Mar y Tierra in Spanish — will be five shared courses, each with a dish by Josh and Lennox inspired by classic European cuisine.
You can expect Gildas’ fan-favourite jamón and Manchego churros, and tuna Sicilian crudo to start, followed by Josh’s take on the Catalonian classic Escalivada with anchovies. For larger plates, quail schnitzel with escabeche, and grilled Octopus and nduja butter sauce.
Josh Emett is one of New Zealand’s most recognisable chefs with a career spanning 30-years. He mastered his craft under Gordon Ramsay in esteemed kitchens worldwide, including London’s Restaurant Gordon Ramsay and The Savoy Grill, and Gordon Ramsay at The London in New York and Los Angeles, and was a judge of New Zealand Masterchef.
His latest opening Gilt Brassiere, combines Josh’s decades of global culinary experience with his wife Helen’s love of Europe, and brings contemporary European brasserie dining to one of Auckland’s most storied neighbourhoods.
