Part four of the Gildas Guest Chef Series welcomes Stephen Hodges, also known as the “Chef’s Fish Chef”.

As the mastermind behind the iconic, much-missed, seafood-only restaurant Fish Face, mentor to the next generation, and co-author of the Australian Fish & Seafood Cookbook, Steve is undisputed royalty when it comes to the ocean’s bounty.

After a decade away from the pass consulting, small-batch fish smoking, and continuing to champion for people to eat and cook more fish, he’s stepping back into the kitchen at Gildas with Lennox Hastie for one night only.

Expect a celebration of exceptional seafood, technique, and ultimate respect for the produce.

Smoked salmon gilda
Michi’s sushi
Haku kingfish carpaccio, ponzu, lemon oil, chives
Cuttlefish, mung beans, seaweed, prawn sauce with pimentón bread
Blue eye, potato scales, wilted spinach, pickled beetroot, ricotta
Crispy skin wild barramundi, fresh peas, speck, lettuce
Crème brûlée
Mille-feuille, crème pâtissière, rhubarb, ice cream

Add-ons
Albany rock oyster, ginger and wakame dressing
Flinders Island scallop, black pepper and caramelised garlic
Hand-cut beef fat chips
