On Tuesday 19 May, sushi master Toshihiko Oe from Sushi Oe takes over the Gildas kitchen, joined by Lennox Hastie. 

People wait years to experience Toshihiko Oe’s sushi in Sydney. Recently relocating his intimate omakase to an eight-seat space at Sydney Fish Market, Broadsheet Sydney described it as “as close as you can get to authentic Japanese sushi omakase without leaving Australia.”

For this exclusive takeover, take a seat in Gildas intimate dining room as Oe leads the menu, bringing his skills and renowned reputation to deliver up to 18 pieces including the finest sashimi and nigiri, chawanmushi, lobster miso soup, beef kushiyaki, and two of Gildas signature desserts reimagined with a Japanese influence.

Reservations from 5pm.
Set menu $225 per person.
