Who We Are
Chef owner Lennox Hastie created Firedoor in 2015, and in 2022 opened his second venue, Gildas. Inspired by his time in the foothills of Basque country, Gildas is a homage to the original pintxo created in San Sebastian and the eponymous film starring the stunning Rita Hayworth. Our intimate wine bar embraces the Basque tradition of the pintxos taverna, where locals come together as a community to snack on small plates, tell stories, and enjoy a drink.
Both Gildas and sister restaurant Firedoor are driven by Lennox’s signature use of simple ingredients and innovative approach to creating unique dining experiences.

Job Description
We are currently seeking a Section Waiter (casual, approximately 25 hours per week) to join the team. This role requires a confident and experienced hospitality professional who can deliver attentive, polished service in a fast-paced, high-quality environment.

Availability for nights and weekends is essential, along with full Australian working rights.

Situated in the back streets of Surry Hills, chef Lennox Hastie works instinctively with fire and ingredient, creating a seasonally driven menu daily to showcase the natural beauty of wood-fired cooking.
2+ Experience as a Section Waiter working in a fine dining restaurant.
Ability to confidently carry three plates.
Great knowledge of hospitality and excellent customer service skills.
