A neighbourhood wine bar with Basque spirit.
Inspired by Lennox Hastie’s time in the foothills of the Basque Country, Gildas is a homage to the original pintxo created in San Sebastián and the eponymous film starring the stunning Rita Hayworth.
The sister venue to Firedoor, just up the road on the corner of Albion Street, Gildas is a celebration of the vibrant pintxo bars of northern Spain. There’s a Spanish-focused wine list, sherries and aperitivo cocktails, served alongside pintxos, drink-friendly snacks, and share plates.
A place where you can decide how you want your afternoon or evening to go. Prop up at the bar or perch at an outdoor table for a quick bite and glass of something delicious before your next destination, or settle in at a table or the kitchen counter designed for lingering for a shared meal. No obligations, just a lot of choices.

Wednesday & Thursday: 3pm - late (drinks and snacks only 3pm - 5pm)
Friday & Saturday: 12pm - late
GOLDEN HOUR:
Wednesday & Thursday 3pm - 6pm
Friday & Saturday 3pm - 5.30pm
Golden Hour reservations available for a 1-hour dining time.

Gildas has teamed up with Hendrick’s Gin to collaborate with local ceramicist Joe Gilbert of Poldy Pots to create custom stoneware martini vessels, designed exclusively for our little Basque-inspired wine bar. More porous than glass, the stoneware acts as insulators to slow heat transfer, keeping each sip bracingly chilled from first to last.
